A better choice for school lunches
January 13, 2020
Folsom Cordova USD fifth-grader Jenna Mansour and Director of Food Services Joye McKetty show new compostable food trays that will soon be used in all elementary schools in the district.
Jenna, a Gold Ridge Elementary student, was concerned about lunch waste and the environmental impact of using styrofoam trays, so she took action by contacting McKetty. The timing was perfect, as McKetty had been working for years to get a supplier for five-compartment paper trays to use in elementary schools. “This is problem-solving month at Gold Ridge,” said Principal David Frankel. “We’ve been talking about different ways to solve problems and used Jenna’s story as an example of one way to initiate change.”
